What I like about this recipe is that you get a delicious homemade vegan marzipan mass by only doing a little work. There are only four ingredients and five steps to make it.

  2. Pulse to combine.
  3. Add almond extract and water, and pulse until it forms a solid marzipan ball.
  4. Knead a dough between your clean arms until it becomes smooth.
  5. Wrap marzipan into a cling film and keep it in the fridge for at least 30 minutes before using.

And that’s it! You now have a delicious vegan marzipan that you can use to decorate cakes, cupcakes, cookies, or enjoy as is. This recipe yields about 250 grams of marzipan, but you can easily double or triple it if you need more.

Notes

Marzipan gets dry quickly, so always keep it wrapped up in between and while using it. 

One thing I love about making marzipan at home is that you can customize it to your liking. You can add cocoa powder to make chocolate marzipan or some food coloring to make it more colorful. You can also shape it into different forms, such as fruits and animals, or make cute marzipan carrots, as I did.

Making Marzipan Carrots: Ingredients and Step-by-step

You’ll need some homemade vegan marzipan mass, orange food coloring (vegan), cocoa powder, and parsley stem to make marzipan carrots.

  1. Mix a small amount of orange food coloring to create the signature carrot color. Go easy and add more if you need, as it is easy to make it darker but more challenging to remove the intense color after.
  2. Shape your marzipan into small carrot shapes and use a knife to create ridges along the sides.
  3. Dust a pastry brush with cocoa powder and lightly brush your carrots to create a fresh, straight-from-the-ground look.
  4. Finally, make a little hole on top of each carrot and insert it with a small parsley stem to complete the look.
  5. Keep your carrots inside the air-tight container and in the fridge to avoid drying. Remove and decorate desserts just before serving. If your stems look a bit off, replace them with new and fresh ones.
